These recipes are favorites of our friends and guest, not all recipes have been tested by Texas Catfishing Adventures.

TCA Fry Batter
 
2 Cups  yellow corn meal
1 Cup all purpose flour
1/8 cup of Tony Chachere's Original Creole Seasoning
1 Tbs black pepper
Dash of garlic powder
Dash of salt
 
This is how we fry our Catfish.
1. Heat canola oil to 350 Deg.
2. Mix all dry ingredients in a 1 gal. zip-Lock bag.
3. Cut you fish into what ever size you like, I like bite size.
4. Pour desired amount of batter into a paper bag, I like to use just enough for a few batches of fish, that way if the batter gets too moist you can change it out without wasting much.
5. Place the desired amount of fish into the paper bag of batter and shake.
6. Once the oil reaches 350 Deg., shake the extra batter from your battered fish and place into the hot oil.
7. After a few minutes the fish pieces will start to float, let them cook just another minute and pull them out, their ready to cool and enjoy.
 
We use this batter for several different things, Fish, Shrimp, Okra, Squash, and Egg Plant. We hope you like it.
 
 
TCA Baked Catfish
 
2 lbs. Catfish Fillets
Butter
Tony Chachere's Original
9x13 glass cake pan
 
1. Preheat oven to 400 Deg.
2.Take Your glass pan and fill it about 1/4" with melted Butter.
3. Take Your Catfish and lay it out in the bottom of the pan in the melted butter.
4. Once all of the Catfish is laid out in the butter, flip them all over to coat them with butter.
5. Now lightly coat the buttered catfish with Tony Chachere's original, flip and coat the other side.
6. Now Cover the pan with foil and bake in a  preheated oven at 400 Deg. for about 15  to 20 minutes or until the fish flakes easily with a fork.
7. Serve Hot with your choice of sides.
 
 
Clint's Catfish Stew
 
1 Large Onion
2 Large potatoes, Cut into small pieces
3 lbs Catfish fillets, Cut into small pieces
2 Cans of chicken broth
2 Cans crushed tomatoes
12 oz Bacon, Cut into small pieces
8 oz of Ketchup
6 oz K.C. Bar B.Q. Sauce
4 oz Cholula Hot Sauce (The one with the little wood ball for a cap)
 
A. Start the bacon
B. Put in onion and potatoes
C. Then brown the fish
D. Add the broth and the remaining ingredients
E. Simmer for 1 hour
F. Add Salt and Pepper to taste
G. All Ingredients may be varied to your taste.
